Directions

  1. Heat the oven to 180ºC.
  2. Season the chicken thighs with salt and pepper and some rubbed thyme, olive oil and lemon juice.
  3. Heat a frying pan with a little vegetable oil and seal the chicken thighs to a golden brown colour.
  4. Place into an ovenproof dish and add some lemon slices and a whole garlic bulb cut in half.
  5. Sprinkle with fresh thyme leaves and bake for 1 hour.
